So…..
My witch farm keeps getting spiders because towny changes the algorithm a bit. The outpost plot is situated at the centre and with everywhere mobs can spawn claimed. If i unclaim the middle chunk where the outpost started, will it unclaim everything else that was attached to it? Or… would I need to make another outpost, then delete one of the chunks?

It depends when you unclaim the plot.
Last time, I've unclaimed an outpost plot, other than signs and doors gone, nothing else has changed.
That's because it was built and claimed before Pri has updated the configuration where as you unclaim it, contents on it will be rollbacked, despite I started building on the plot when I claimed it.
In your situation,
If you unclaim the middle chunk where the outpost started, BEFORE THAT, you should claim another outpost nearby it before unclaiming the previous one.
Remember this has to be proven, so better to try than to fear.

Did that freak. Well, it isn't towny messing up the witch huts, I don't know what is. Everything was pointing to towny. Ive sorta just wasted a load of time here.

Does anybody know what messes up the witch huts and makes other mobs spawn? Spiders stop it as they don't fall through the floors. This fills the mob cap up and stops witches.

Listen if you unclaim an area it will just unclaim that one spot you're in.
do /town toggle mobs to change the status of the spawning of mobs.
