1. Not being able to tell if the shop is in stock or not, then getting player spam (Shop is outta Stock) in your chat.
2. If you sell a lot of item's using item frames to display what you are selling makes it easier for players to find (specially since some texture packs makes signs hard to read at certain distances and the player may walk right by.) what you are selling but it also tends to lag out the area with all the entities.
I been looking around and actually tried out this one it was very simple to use and was overly eye appealing as well.
It has a chat window message of what your buying, the amount of money you have to spend and a confirmation if you are sure you want to buy it or no. It also shows you the Stat's on enchanted Gear and Weapons, which would amazing add on instead of having 1-2 Signs Above the chest showing what the actually item is. It also lets people buy exactly the amount of the item they need, so say if Joe only needs 3 jungle logs but the person is selling in stack of 64 at the 64 price Joe would spend more then he needed. This way players can buy exactly the amount they want.

Also the chest shop can have a fee per chest in their shop. So it will cost the player to actually sell the item in their shop this way controlling the economy. Example: Cost 5 Rickies to set up a chest (One time fee) If it cost 5 to create a chest shop chest, it will stop people from under selling diamonds etc due to the fact they need to make the money back from the chest and also make a profit on the item they are selling.
Another really cool feature this plug in has is the Item you are selling will be displayed as a floating item above the chest. So say if you are selling Diamonds, a Image of the Diamond will appear on the Top of the Chest in a floating manner. Which rules out the need for signs, and Item frames.

Extremely easy to set up. Instead of having to get the item number, and sign set up its as easy as punching the chest with the item. Then the chat system applies and you can easily put in the info of price per item. Its as simple as that!
Here is a Video (With a humorous twist on it)

Now I don't know to much about plug ins ill admit and I am not sure this one would work on the server but I couldn't resist at least getting the suggestion out there I do know it uses lockette and we use the signs to lock our chests but it is a really cool plug in and hey it's worth a shot of putting it out there
